Pizza Special - Alberto

Being an avid forager, the fall equinox is one of my favorite times of the year because I know that in the foothills surrounding us that there is magic happening-- the chanterelles are popping! Chanterelles hold a special place in my heart. I always love coming out of day of hunting when my fingers are slightly orange and they have a fruity apricot nose of the chanterelle mushroom.

The Alberto was created to showcase this simple mushroom and how well it pairs with other classic Italian ingredients such as speck. Speck is an air-dried and smoked meat from the Alto Adige region in Northern Italy along the Austrian border. Although speck comes from the north, it runs rampant on pizzas in Napoli. The name of the special is in honor of Alberto who supplies Tutta Bella with speck and other specialty cured meats from Italy. A few of us had the pleasure of meeting Alberto a few months back. He is incredibly knowledgeable and passionate about the food from his homeland. I could have listened to his stories all day!

This pizza starts with an extra virgin olive oil base and fresh mozzarella. It’s then topped with a generous handful of chanterelles and a dusting of pecorino romano before it is kissed by our wood-fired ovens. After we pull this masterpiece from the oven, we top it off with smokey speck, peppery arugula, decadent parmigiano-reggiano and a drizzle of extra virgin olive oil to tie it all together. The Alberto will only last as long as the chanterelles are in season. Come get it now before it goes away until next fall!

Authentic Italian Espresso

Neapolitans are as fiercely passionate about espresso as they are pizza. No meal ends without the digestivo that espresso provides. Espresso soothes the stomach and makes the heart contento. In true Italian tradition, we “pull” our espresso manually from a Victoria Arduino hand operated lever machine. Every cup will give you a complete espresso experience – a full-flavored, robust, yet not bitter, shot of espresso, topped by a thick layer of velvety reddish-brown crema which leaves a sweet lingering aftertaste.
